The owners themselves or one of their professional staff will grill the meat to ensure the best taste and doneness is achieved to do justice to the high quality meat. Must try is the Yuba with waygu beef, using the misushi (from the forearm of the cow or also known as the oysterblade) low temperature (sou vie) cooked along with a dashi broth. A truly decadent dish that will leave you fond memories of your meal.

“Beef Noodle” is hand-cut A4 grade Miyazaki sirloin beef (that literally looks like noodles) floating in cold dashi soup, a sure crowd pleaser. Aburi striplion with white truffle oil, red vinegar sushi rice is an aromatic feast for your nose as it is for your palate. Must taste is the tenderloin which is simply seasoned with salt and pepper and grilled over low heat, while the thick cut cow tongue is from the back part of the tongue which is the most premium and tender part.
