Hors d’oeuvre comes in a trio of bite size savouries that will tickle your taste buds and open your palates for the courses to come. Daikon With Avocado is outstanding, the creamy avocado has a buttery consistency and a rich, nutty flavour paring well with the thinly slice radish (daikon).

An assortment of home made breads are for the choosing such as fluffy milk loaf, healthy matcha (Japanese green tea), dense chestnut bun perfect with the accompanied fine unsalted butter. White Asparagus is simply brilliant in both taste, plating and execution. High quality imported white asparagus from the Loire Valley in France are first boiled then chilled, lined with green asparagus cream and decorated with shiso flowers. Accompanied with “Hotate Burger”, fresh Hokkaido scallop (hotate) slices are used to sandwich a tofu core sprinkled with poppy seeds. Both white asparagus and scallops are amazing on it’s own and flavours can be further accentuated by the special sauce made from chicken broth and a touch of citrus vinaigrette with cardamom.

Memorable main is Iberian Pork, roasted loin with truffle potato mash, acidulated red onions, “Awabi-take” mushroom stuffed with chorizo and fresh herbs. A simple sauce made from the reduction of pork jus and sage is poured table side. The juicy and flavourful Inberian pork is from a traditional breed of domestic pig that is native to the Iberian Peninsula with high intramuscular fat that yields the typical marbling seen and much loved.

“Crisp” is a high caliber luscious dessert and a play with pistachio and hazelnut textures, hazelnut and pistachio cream separates the hazelnut biscuit and pistachio sponge cake base with hazelnut and pistachio ice cream. A edible gold leaf concludes this sweet ending.
