With a golden-brown char around the edges, the Buttered Scallops have a firm texture, is light yet succulent at the same time, with a briny, slightly sweet flavor.
The Signature Norwegian Salmon Simmered in Shima’s Special Sauce is the pièce de resistance of the meal albeit it is an appetizer. The salmon is creamy and buttery, firm but moist and flaky, simply a mouthful of bliss when taken together with a spoonful of Shima’s Special Sauce which is both subtle, naturally sweet and rich in umami. It should be noted that Shima’s Special Sauce is a 43-year-old long-standing recipe, created from when the restaurant first launched, meticulously prepared with a 6-hour long broth consisting of salmon bones, grilled salmon tail and fins, the sauce extracts and encapsulates the true essence of the fish itself.
