Opened in 1994, Les Amis (Translates to “The Friends” from French) is the flagship store of the Les Amis Group. Brought to Singapore by a group of four friends who wanted to bring the fine dining aspects of French cuisine, Les Amis is now consistently deemed one of the best French restaurants in the region not only because of the immaculate food and beverage served but also the world class staff that makes dining a holistic experience at Le Amis. On this note, all the staff at Le Amis wears only a certain type of perfume from French luxury brand Chanel, this is to ensure that the fragrances will not affect the aromas from the dishes.
Some recent awards include 3 Michelin Stars by the Michelin Guide Singapore, as well as ranking 12th and 16th respectively in both years out of Asia’s best 50 restaurants. Located at Shaw Centre, it is conveniently accessible being in the heart of Orchard, yet it is also tucked away enough such that the elegance and serenity of the fine dining experience is not compromised.
With high ceilings and chandeliers, local architect Tay Kay Ngee beautifully designs the place. The majestic visual is very much complemented by the artworks of renowned Chinese artists that they display on their walls. The top floor houses the private rooms with the main dining hall on the lower floor. Much thought has even been given to the toliets, in tip top condition stocked with handwash from yet another French famous brand Diptyque. Executive Chef Sebastien Lepinoy provides his guests with three menus, the Classic, the A La Carte, as well as the Summer menu. All of which are specially crafted with ingredients specially from France.
The hot appetizer comes in the form of seafood. La Langoustine De Loctudy – An amazing langoustine pan roasted wrapped with thinly sliced courgette (zucchini), finished with some Kristal Caviar right in the middle. An emulsion of extra virgin olive oil is then drizzled onto the dish which is simply icing on the cake. The zucchini sauce poured table side is made from mussel jus, fish stock, white wine and butter for consistency. There are enough supporting characters while allowing the main langoustine from Loctudy to really stand out without being overpowered, a dish that is carefully curated with maximum effort.
With seafood leading the way, we move on to Le Bar De Saint Gilles – Croix – De – Vie. A line – caught sea bass from Saint – Gilles – Crois – De – Vie (from Western France in the Atlantic ocean), served on a concoction of its own cooked juices (mussel jus, white wine and fish stock), very finely chopped chives, and carrots. Thinly sliced oyster mushrooms are placed intricately on the main body before roasting, inspired to resemble the scales of the fish before garnishing with 2 sprigs of chives and some parsley. Eaten brilliantly with baby purple artichoke, lightly grilled and simply seasoned with salt. The presentation on its own adds another dimension to the the dish.
There is no other way to finish a course other than dessert, and Le Baba Au Rhum Agricole acts as the perfect closing curtain. Rhum Agricole is French for cane juice rum. It is distilled from sugar cane juice rather than molasses. Baba Au Rhum is a small yeast cake infused in the syrup of said rum. At Le Amis, they add another layer by adding a citrus flavor to the cake. Simply presented, the flavor profile is full or the richness of the whipped velvety cream complementing the lightness of the cake.
Two years since the inception of Les Amis, they have been consistently awarded with the prestigious and rare Grand Award by the Wine Spectator year after year (1996–2017). There is only a total of 89 Grand Award Winners worldwide and only 5 in Asia. Leading the team of sommeliers at Les Amis, Mr. Rajeswaran Raja Gopal brings his wealth of knowledge and experience on wine to the Les Amis Group, serving over 3000 wines mainly from the “Old World” (historic reference to those parts of Earth known to Europeans before the voyages of christopher Columbus). The comprehensive wine list is designed to complement the modern and classic cuisines served at Les Amis. Over 90% of the produce and ingredients are imported from France with focus on sustainability such as line caught fish.
