Dom Pérignon is always a vintage wine and can only be produced from the grapes of a single year. It takes no fewer than eight years of patient elaboration to reach its aesthetic ideal. In the darkness of the cellars, inside the bottles, the wine has gone through an active transformation to reach the Harmony that forever signs a Dom Pérignon.

For each vintage and from its inception, a limited number of bottles are set aside in the cellars, predestined for longer maturation. After close to 15 years, expansion of energy reaches its peak and Dom Pérignon rises to an apex of essential, radiant vitality in its state of Plénitude. Elevated to new heights, it unfurls across every dimension – wider, deeper, longer, more intense – and gifted further with an extended longevity. With Dom Pérignon Vintage 2004 Plénitude 2, Dom Pérignon reconnects with the year 2004. After the syncopated rhythms of 2003 – marked by dramatic frosts and a historic heat wave,constraining grape production by the vines – 2004 appeared evident, a year of renaissance and calm.With its remarkable ease and generosity, the 2004 winemaking year stands out in the history of Dom Pérignon. The year unfolded in a virtually ideal scenario – each season segued to the next with ease and fluidity, devoid of disturbances or excess. A rather cool August was followed by afew weeks of dry heat in the final weeks really shaped the vintage, providing grapes that were both in excellent health and superbly ripe. During the 18 years of maturation, the architecture of the assemblage deployed – embracing, affirmed and precise. The long, slow maturation firmed up the wine’s body while drawing it out, rounding it and polishing its essence. With this amplified energy, the wine traces the contours of a sphere that lets harmony spring forth on the palate.

This 2004 creation reveals this tension and lets joy spring forth with a soaring sentiment of lightness. The bouquet of Dom Pérignon Vintage 2004 Plénitude 2 blossoms with a softness both ethereal and persistent. The fruit is now tactile, affirming its presence with vigor and elegance.Still present, the minerality has opened up with elation, reappearing in a wonderfully saline finish punctuated by roasted notes. It has an extreme, tactile precision, deep and sculptural, with citrusy notes of pink grapefruit and blood oranges that gently cede to figs. The additional time on the lees elevates the minerality of the vintage with the sublime maturity that is Dom Pérignon’s signature,and the sensations come together in a persistent and elegant finish, underlined by sappy, licorice notes.

To further elevate the vibrant and ethereal Dom Pérignon Vintage 2004 Plénitude 2, two-Michelin-starred fine dining restaurant, Saint Pierre, has designed an exquisitely refined menu that exudes timeless elegance, harmoniously pairing alongside the remarkable champagne.Helmed by chef-owner Emmanuel Stroobant, the exclusive menu pairing forays into the history of Saint Pierre’s classic dishes reinvented to pair masterfully with Dom Pérignon Plénitude 2.The dining experience begins with the refreshing Marron & Caviar paired with the Dom Pérignon Vintage 2002 Plénitude 2. Infusing caviar, an ingredient that Chef has always had on the menuever since Saint Pierre opened in 2000, with marron in a unique pairing blends the subliminal flavours of both into a dish that simply melts in your mouth.

The entreé is followed by Scallop & Almond, a nostalgic dish on the menu in which Saint Pierre got its first Michelin Star in 2017, and one which still displays remarkable flavour profiles that pair with the impressive Dom Pérignon Vintage 2002 Plénitude 2. The Seabass & Corn is a refreshed rendition of a crowd favourite, Saint Pierre’s miso cod, which makes a stunning comeback with a surprising change of ingredients that uplifts the dish to a whole other level; a transformation that rivals it’s companion, the Dom Pérignon Vintage 2004 Plénitude 2.

Next on the menu is Pigeon & Black Nut, a unique dish which showcases both the European and Asian aspects to Chef Stroobant’s cooking style. This dish, paired with the Dom Pérignon Vintage 2003 Plénitude 2, is a tribute to Chef’s past 23 years in Asia; during which the region has influenced his cooking style alongside the ingredients which he uses. Rounding off the meal is a delectable dessert, Rice & Citrus. Inspired by the fruity and sweet grapefruit, brioche and honey notes in Dom Pérignon Vintage 2004 Plénitude 2, Chef explores the pairing with the Japanese pomelo, which has a similar profile to the tart grapefruit.
