The grandiose 1919 Waterboat House is an exercise in luxury dining, proof that it matters as much where you eat as what you eat. Furnished in the Art Deco style, with a feature chandelier and an iconic white elephant head on the wall, the 1919’s attempt to recreate the style of the Great Gatsby era would make F Scott Fitzgerald proud.
Housed in a colonial heritage building in the Marina Bay district, the 1919 brings contemporary European flair to the heart of Singapore, with a focus on the French culinary classics. Chioppino is one such example, a stew with all the goodness of the sea such as squid, mussels, pacific fish, shrimp, scallops in a rich and hearty broth that is poured table side. Perfect for all occasions.
Both A la carte and set menus are available for the convenience of diners. And to continue one’s sensuous opening chapter to the night is Saint-Jacques, well roasted extra large scallops from Hokkaido Japan that are plump and juicy served with braised leek, sugar peas, buttered lentils in a flavourful scallop emulsion. One can see and taste that only the highest quality ingredients are used in every dish.
Known best for its seafood centric menu, the 1919 Waterboat House shines in Bar D’ Ligne with each catch and produce freshly prepared and beautifully presented, a gastronomic journey that is intense as it is jaw dropping. Pan roasted sea bass, on a spread of potato mousseline that is luxurious, light, and smooth together layered with essence of forest mushrooms for that earthy touch accompanied with seasonal vegetables. The fish has a brilliant crust yet moist on the inside, flavours further enhanced by the potato and mushrooms. A sublimed mix of land and sea produce on a plate.
Save some room for dessert, for the 1919 Waterboat House culinary team’s inventive spirit has created a dessert menu that will leave you wanting more. Highly recommended is the Pomme, vanilla sabayon crumbles with a mix of cinnamon glazed sliced granny smith apples, strawberry and edible flowers to garnish. A very colourful and festive course.
To complement your dining experience, the 1919 serves a variety of reds and whites, with a special focus of course being in the fine French selection. The 1919 Signature, consisting of Gin, Campari and Fresh Lime, a refreshing treat to begin or end your dining experience.
