1 Michelin Starred Restaurant JAG curates a magnificent and unique Yusheng Platter to Usher in the Year of the Rat. Celebrate Lunar New Year with family, friends and colleagues at Restaurant JAG, Singapore’s only French restaurant serving up Savoie herb-led omakase dining experience. The uniquely French-inspired Yu Sheng features a myriad of traditional Chinese ingredients, colourful seasonal vegetables and JAG’s unique selection of wildly-foraged herbs from the French Alps.
Each Yu Sheng platter is a labyrinth of fresh textures and flavours marking the significance of the Lo Hei and the good fortune each toss brings. The vibrant medley of juicy scallops, prawns and salmon, a symbol of abundance and prosperity, is framed by shades of green, 2 purple and white radish alongside black, red and yellow carrots, adding elements of luck, longevity and wealth. Homemade Ortie-herb dough fritters, peanuts, toasted sesame seeds and amaranth adds a lovely crunch, while shards of black garlic, aromatic lemon balm and shiso leaves infuses a fresh fragrant flavour. Completing the dish is the delicious homemade Plum & Reine des Pres dressing ready to bind all the wonderful elements just before the symbolic toss.
Savour BlackBookAsia Magazine recommends the luxurious Beluga Caviar Yu Sheng option for a true decadent experience. An entire tin of caviar is served with the above mentioned tantalising Yu Sheng. The glistening pearls topped onto the Lo Hei, adds an element of grandiose and delicious indulgence to any dining occasion.
The JAG Yu Sheng is available from Tuesday the 14th of January to Saturday the 8th of February, priced at: •S$98++ for up to 4 pax OR •S$398++ for Beluga Caviar selection for up to 4pax. The kitchen will be happy to accommodate guests with dietary restrictions and prepare a wholly vegan or vegetarian Yu Sheng platter as well. The Restaurant is also open to curating bespoke French-inspired menus should companies or diners wish to create contemporary and truly unique dishes to usher in the Year of the Rat.
