Served on a bed of seasonal vegetables and fruits such as raspberries adding much texture and a splash of colour to this refreshing dish. One must not miss the Squid ink Spaghetti, where actual squid ink is used in the making of the pasta which is cooked perfectly al dente, tantalisingly firm to the bite. Highly recommended main course is Guinea Fowl, specially imported from France, done two ways, confit leg and roasted breast with honey and prized marjoram carrots. The meat is tender due to the sous vide process with herbs such as rosemary and olive oil. Be careful as this course is particularly addictive. Iberico Pork is simply divine, the belly of a Spanish pig is used and expertly slow cooked for five hours, chilled then cut and finally pan fried skin side down on high heat. A tedious process but worth every moment. Incredibly crispy on one side yet juicy and moist on the other. Smoked apple, balsamic and anise sauce adds sweet sour dimensions to this dish, harmoniously balancing the richness of the meat.
For that well rounded end to any meal, the dessert Coulant hits all the right notes. Pistachio gelato sits pretty on a cocoa nibs sable cookie with top quality hazelnuts from Piedmont, a region in northwest Italy. A touch of gold and sugar crowns this course.
