Firstly the location, this restaurant is found at a secret part of Capitol Piazza whereby the private entrance is via the exterior of the mall. Chances are you will walk passed it without even knowing and that is what we call a real hidden gem.
Slide to open the gorgeous wooden doors only to be welcomed by the Wagyu & Sushi By Matoba team with the same hospitality you will get at any fine dining places in Tokyo. With a maximum seating of up to 8 persons, each with a traditional wooden counter view to watch chef Bryan in action at various angles.
Speaking of the chef, he specialises in wagyu and sushi with deep culinary experiences around the world. So if you are a fan of either then this is the place for you. Produce are specially sourced from known locations around Japan and freshly flown in on a regular basis by the owners who themselves are Japanese and/or have strong ties with various farmers, fishermen among others.
Let’s start with lunch, where there are five choices of set menus to cater to almost every foodie out there. We know that lunch is sometimes a prompt affair thus the Wagyu Katsu Sandwich set is ideal. Imagine premium quality Japanese wagyu katsu in-between hot toasted bread. One bite and the flavours will start to flow, satisfying your stomach like having a warm milk on a cold day. This set also comes with the classic chawamushi, seasonal salad and miso soup. There is even wedged potato served in a classic wooden sake cup, what more can you ask for?
For dinner, it is a whole different game altogether. This time four selections to choose from. Let’s dive deeper into Wagyu & Sushi By Matoba ocean of goodness, both sets comes with five kinds of appetisers that showcase the Japanese cuisine in all its glory. It ranges from the delectable wagyu katsu right in the middle of the serving plate to the individual starters such as the silky Beancurd Skin with Ikura and Kombu Jelly. Followed by sashimi that is changed according availability of the premium seafood variety. Then comes the Umami Soup and Wagyu & Sushi By Matoba is serious when they use the word umami. Packed full of flavour, a broth that has been boiled over many hours bursting with umami and has a most sensational wagyu meatball you have to taste to believe.
Now this is the part which differentiate the sets, the Wagyu Steak Omakase Course has six kinds of sushi and the Sushi Omakase Course ten types. Plus Wagyu Steak and Grilled Black Cod with Saikyo Yaki as mains respectively. Editor in Chief, Gabriel Tan recommends to have the wagyu steak medium rare but closer to the rare side. If you are lucky you might even get Matsusaka or Kagoshima beef, again depending on the shipments at that time. Carbs follow with somen and then dessert which is a tantalising yuzu (famed Japanese citrus fruit) sorbet.
