Entering the restaurant, be amazed with the well designed and beautifully decorated restaurant boasting modern chic interiors accompanied with warm and friendly staff. Dining in this critically acclaimed restaurant high in the sky, allows diners a true escape from the hustle and bustle of Singapore’s urban jungle while indulging in simply magnificent fine food and wines.
Hearty greetings arrives with the first amuse bouche, Porcini Mushroom Puff with home-made “vegemite”. Completely standing out from the norm are the delicately roasted vegetables used in the making of this “vegemite”. Using lesser yeast in the process, making it less salty and more inviting to the palette while still retaining it’s rich maltiness, full of umami flavour similar to beef bouillon.
House Cured Tuna with Compote Yuzu Jelly is a refreshing second amuse bouche, subtle flavours of the sea courtesy of the soft textured tuna with a touch of sweetness and citrus elements from the jelly. Savour this goodness in one mouthful.
Truly amazing is Gambiri Prawn with Truffle. Imagine technically perfect cut fresh prawns topped with sliced aromatic black truffle and finger lime from Australia. Finger limes also known as citrus caviar, is a fruit containing caviar-shaped vesicles that burst with a lemon-lime flavor complimenting delicate seafood dishes wonderfully.
Plating and presentation are just as important as taste at Stellar, testament to this is Pancetta with Fine de Claire Oyster. Freshly shucked oyster from the largest oyster producing region in the world located in France complimented with Morcilla (Spanish blood sausage) and Pancetta (Italian Bacon) puree, Pancetta crumbles with Nori (Japanese Seaweed) cracker. A delightful mix of bold flavours that lingers long on the palate.
Elegantly presented on a custom made pot like dish is Fig deep-fried in light batter with Jamon Iberico, unpasteurised Gorgonzola Cheese, accompanied with jam, walnuts and honey imported directly from Madagascar. The combination of sweet savoury textures are heavenly.
The main highlight for the night or day is Risotto with cream, bite size pancetta, slice truffle and hazelnut with generous portions of melt in your mouth pan seared Japanese tuna belly. An elevated comfort dish that is brilliantly executed with masterful finish.
Finish off with Tajima Wagyu Oyster Blade with truffle slices, oyster leaf on top of a healthy earthy beetroot puree adding a bright splash of red to this dish. On the side a unique potato nest, lightly deep fried to a crisp golden brown perfection. Oyster blade is a unique cut that is gaining popularity due to its good balance of flavour, marbling and tenderness, well used as the center of attraction in this course. Stellar is the first restaurant in Singapore to have its own cattle at the esteemed Tajima Wagyu farm in Australia.
Ending the night with desserts eloquently presented table-side by pastry chefs in front of your very eyes is Dessert Art giving diners a unique dining experience like no other. A sweet platter for kings and queens with an assortment of chocolate, cakes, ice cream, meringue, fruits and nuts.
