Monti, Singapore

Monti is a contemporary Italian restaurant located along the picturesque Marina Bay area. Having won multiple accolades, the 108-seater Monti is the perfect restaurant for your date or your next social gathering. The restaurant features elegant ambient lighting particularly at night, allowing guests to get an excellent view of the Marina Bay skyline through its large, dome shaped glass windows. An extensive bar lines the walls of the restaurant with bottles of classic liquors from Belvedere, Bombay Sapphire to Patron.

The menu features mostly traditional Italian ingredients apart from a few Asian twists. First up, one should not miss the Smoked Swordfish Carpaccio which features thinly sliced smoked swordfish served with fennel, orange, citrus dressing and a pomegranate reduction. The nice hits of acidity helps to cut through the strong smoke and flavour of the swordfish. Next in line are Cold Cuts, a platter of deli meats such as San Danielle, Salami, Coppa and Mortadella and is served alongside marinated olives and pickles.

For the main dish, highly sought after is Charcoal Grilled USDA Prime Ribeye Steak, done to your liking however medium rare is the recommended doneness, served with roasted carrot, US asparagus and Japanese sweet corn with creme fraiche on top. The roasted vegetables gives off a robust aroma that paired very well with the heavy beef. A must for fans of meat!

If there was an award for the most decadent pasta in town then Monti’s Squid Ink Tagliolini would win hands down. The tagliolini is cooked perfectly with fresh roma tomato, red mullet bottarga (salted, cured fish roe that adds tremendous flavour to a dish), asparagus and dash of shiso for aromatics, topped with Hokkaido sea urchin (Uni), Kaluga queen caviar and shucked Fine de Claire oyster. A dish for true hedonists around.

Hokkaido Scallop is simply brilliant, pan seared to a lovely golden brown on the exterior leaving the inside still soft and juicy served on a bed of celeriac and squid ink tuille. For the finishing touches, generous amounts of freshly shaven white truffle covers this dish. (Only available during white truffle season specially flown in from Alba Italy at an additional cost).

Diners will be very intrigued by what the chefs manage to create here in the desserts section of the menu. Almost like a piece of art, Cigar is made with a very pleasant and almost fruity Lapsang Souchong tea infused chocolate cigar complete with olive oil ash. A sweet and fun dessert for the whole family.

Monti has a wide selection of liquors and spirits at the bar and its well reflected on the menu. There are eight different beers from different countries and numerous gins, vodkas, tequilas, rums and whiskeys to choose from. What is perhaps the focus for Monti is the cocktail creations that spans over five pages. The ones that caught diners attention were under the category of “Italian” and had names such as Godfather – Whiskey, Amaretto and Rossini – Monin Strawberry, Villa Sandi il Prosecco Rosé. The restaurant also has impressive list of mostly Italian, French and Chilean wines sorted by wine varietal.
