Another is the Signature Nasi Goreng Mercure which is only available at Mercure Sabang, the uniquely pesto infused fried rice is served with grilled prawns, savoury fried chicken galangal, covered in an omelette and with sambal, pickle and crackers on the side.

Guests also have the ability to make special orders on local dishes that are not in the menu that they would like to have a taste of. Options such as Buntut Bakar, which is charcoal- grilled oxtail in a special sauce or Ayam Penyet, traditional Indonesia street food of fried chicken and rice are available subject to availability and has to be ordered in advance for preparation purposes.
