A super fresh Japanese shell fish (Surf clam from Hokkaido) softly cooked in white wine served on a base of potato with beet coloured broccoli and thinly sliced cucumber, beautifully finished with micro greens. Foie Gras Et Pigeon Ramier is best enjoyed with a side of brioche toast. Layers of pressed marble style terrine is made using goose liver and pigeon encrusted in a delicious puff pastry.
