L’Osier allows diners to dine in a relaxed atmosphere with an understated elegance of white and gold hues filled with priceless artworks. From the grand chandelier to the stylish flower arrangement centerpiece that changes on a regular basis, be enchanted while dining in one of the very best restaurant, Japan has to offer.
Hors d’oeuvre comes in a trio of bite size savouries that will tickle your taste buds and open your palates for the courses to come. Daikon With Avocado is outstanding, the creamy avocado has a buttery consistency and a rich, nutty flavour paring well with the thinly slice radish (daikon).
An assortment of home made breads are for the choosing such as fluffy milk loaf, healthy matcha (Japanese green tea), dense chestnut bun perfect with the accompanied fine unsalted butter. L’Osier uses the prominent Puiforcat Paris collection of exclusive silver flatware and cutlery that are both functional and aesthetically pleasing to the eye.
For Amuse Bouche, cream of broccoli with beetroot ice cream and squid ink cracker. Broccoli is blended perfectly to form a lovely smooth texture with added chopped beetroot and ika (shell fish), finished with drops of mild olive oil. A delicate dish and outstanding way to start your meal.
White Asparagus is simply brilliant in both taste, plating and execution. High quality imported white asparagus from the Loire Valley in France are first boiled then chilled, lined with green asparagus cream and decorated with shiso flowers. Accompanied with “Hotate Burger”, fresh Hokkaido scallop (hotate) slices are used to sandwich a tofu core sprinkled with poppy seeds. Both white asparagus and scallops are amazing on it’s own and flavours can be further accentuated by the special sauce made from chicken broth and a touch of citrus vinaigrette with cardamom.
Memorable main is Iberian Pork, roasted loin with truffle potato mash, acidulated red onions, “Awabi-take” mushroom stuffed with chorizo and fresh herbs. A simple sauce made from the reduction of pork jus and sage is poured table side. The juicy and flavourful Inberian pork is from a traditional breed of domestic pig that is native to the Iberian Peninsula with high intramuscular fat that yields the typical marbling seen and much loved.
“Crisp” is a high caliber luscious dessert and a play with pistachio and hazelnut textures, hazelnut and pistachio cream separates the hazelnut biscuit and pistachio sponge cake base with hazelnut and pistachio ice cream. A edible gold leaf concludes this sweet ending.
Quenching the discerning thirst of a global clientele is no mean feat and L’Osier does it in style presenting wines from the world’s major viticultural regions highlighting a fine collection of French wines of rare and varied vintages as well as wines from small producers that are released in limited quantities. As the food menus are updated frequently due to seasonality, the sommeliers are readily at hand to pair the best wines that are uniquely suited to the myriad flavors of the à la carte or tasting menus. In addition to the vast collection of wines, other libations include classic cocktails, single malt whiskeys, spirits and liquors from top beverage houses around.
