This dining establishment which has maintained 3 Michelin stars for a stellar eleven years running, sits upon the peak of iconic Grand Lisboa Hotel’s dome (thus the name) with sweeping 360 degree views of the surroundings. Right in the middle of the restaurant lies a beautiful grand piano where an expert pianist will serenade diners during their meal with a repertoire of classical and jazz music, surrounded by renown Baccarat floor lamps. Hanging gorgeously above, from the super high ceilings is an elegant crystal chandelier that illuminate dazzling lights throughout the premise from over 131,500 pieces of Swarovski from Austria.
Start off your memorable meal with an assortment of freshly made bread such as plain baguette, brioche, tomato focaccia and among others. The Walnut and Apricot bread with bacon fillings is soft and fluffy, delicious even without butter which is served alongside, both salted and unsalted made proudly in France. Le Caviar is a sublime dish that taste as wonderful as it looks, generous amounts of imperial caviar carefully placed on top of delectable king crab, refreshed with flavourful crustacean jelly and light cauliflower cream with parsley beautifully plated in little drops. Delightful textures in the crab, elevated with natural saltiness from the premium caviar adding that touch of finesse.
Here, the La Morille is a must-try item from the menu. The incredibly lush ravioli is stuffed with 36 months old comte cheese, served with morel mushrooms, cheese sauce and crispy iberico made in house. Served covered and once lid is opened, aromas of the cheese fills the air and delights the senses. The fillings in the pasta gently burst in the mouth, oozing light comte cheese that is accompanied harmoniously with the earthy mushrooms and creamy sauce. Pairs well with Luligny Montrachet, from producer Domaine Leflaive, 2010 Vintage, a sightly sweet, complex and buttery white wine.
One dish that also excites the taste buds of many is La Saint-Jacques, pan seared top quality Japanese Hokkaido scallops with delicious green curry sauce and super-fruit coconut foam. Squid ink tuile is placed gently on the top of the plump shellfish with some fresh coriander to finish. Asian flavours that we so love abound in the sauce. This course goes perfectly with Meursault, 1st Cru – Les Charmes, Henri Boillot vintage 2011, made from Chardonnay grapes from the Burgundy region in France. A glass of wine with aromatic burst of white fruits.
Le Carioca is a clean and concentrated approach to fruit flavours, with blackcurrent sorbet, dollops of guava moose on a base of papaya coulis topped with sugared biscuit in the shape of a butterfly and a mini gold leaf. Combine a bit of all the different elements for one of the most sumptuous spoonfuls you are likely to ever have. A refreshing dessert that is a prequel for more to come. The Cheese Trolley is not to be missed with an amazing array of hard and soft cheeses made from cow or goat’s milk, some fresh and some delectably aged. All comes with condiments like honey, figs and nuts, there is indeed something for everyone.
