Dining
The dining scene at Four Seasons is something quite extraordinary and unprecedented, offering various restaurants specializing in different cuisines. Held in high regard and as of most importance is the quality of ingredients used that cannot be compromise and paying respect to the produce used pertaining to sustainability, avoiding over farming and over fishing.
With 1 Michelin-starred Cantonese restaurant Yu Yuan bringing the splendor of Shanghai’s vigorous 1920s to modern Seoul, celebrity chef Akira Back delivering distinctive and innovative modern Japanese fare with a Korean essence and The Market Kitchen serving up a stunning buffet of international food, flavours and cuisines, the food experience here is meant to stimulate and delight.
Yu Yuan certainly deserve it’s Michelin star that has been retained three years in a row. Chinese art works and sculptures adorn the walls with classy “old Shanghai” music playing softly in the background. The signature dish, Peking Duck is amazing, skin magnificently crispy with meat moist and tender. Served and carved table side and eaten wrapped in a pancake with “hoisin” sauce, shredded cucumber and spring onions.
Alternatively, if a little more entertaining prospect of dining is sought after, Boccalino’s chefs prepare contemporary renditions of classic southern Italian dishes in an open kitchen, displaying fervour with every dish. Insalata D’Astice is recommended, imagine generous amounts of lobster on Russian salad with crispy seaweed wafer on a bed of carrots, peas and potatoes with seasonal greens. Hearty and healthy, this salad can be ordered in individual or sharing portions.
As for the needs of cocktail aesthetes, the exotic and glamourous Charles H, will provide nothing more than the perfect drink. Hidden somewhere in the hotel which adds a sense of mystery to your drinking experience. Once you find the secret location (perhaps with the assistance of a staff), you will find yourself in a dimly lit environment with leather sofas yielding a pre prohibiton era vibe.
A welcome glass of champagne sets the mood for the evening with music that changes into the night from deep jazzy soul and funk to more heavy bass and sexy beats. The Tahitian Unicorn cocktail is a must order, served on a traditional wooden sake cup with dry ice inside and leaf to garnish, the actual cocktail is in a circular glass bowl placed on the cup made with French gin, aquavit, pineapple wine, coconut, lemon with butterfly pea that gives the drink it’s subtle purple blue colour.
