As well seen in Raw Fish, halibut with cheongyang green pepper sauce and pickle green pepper served on a beautiful translucent dish, lit from the bottom on a base of solid wood. This illuminated presentation showcases the semi translucent texture of the expertly sliced fish. Addition of the aromatic shredded shiso further enhances the extremely fresh fish.
Menu changes depending on the season as well as when the kitchen team find special fresh ingredients. Most of the produce used like seafood is from Korea, very little is imported. Made with king oyster mushroom, young squash with white truffle oil is chef’s signature pizza. The Pizza with thinly sliced avocado and mushrooms has a super thin crust further elevated by truffle oil which does not overpower. Delightful with a glass of J.Lohr vintage 2016 Chardonnay from a family owned winery since 1974.
Outstanding dish is Yukhoe made with class consisting of raw Korean beef ++ tartare with egg yolk and osteria caviar served in a cute Uni (sea urchin) shape glass bowl . The plus + categorized the grade of the Korean beef, + is good ++ is premium. A classic beef tartare recipe with chopped onions, capers, pepper but using super premium Korean beef instead of the typical raw ground meat. This dish works on a flavour point of view and a joy to consume.
Your sumptuous dining experience continues with Radish, elegantly braised daikon, pickled perilla leaf and trio of Jang sauces – braised in soya sauce wrapped carefully in sesame leaf. – A splash of colours from the green Spanish sauce, red Gochujang and yellow DoenJang soya sauce, the combined flavours burst from the daikon which soaked its essences like a sponge. A top notch and world class dish.
Discover inventive yet authentic cuisine that will inspire even the most discerning of palates in the fried Uiryeong Quail, with pickled mushroom, konbucha infused with white and black fungus, finished with eggplant sauce. Simply plated but packed with refined flavours, pairs best with the medium bodied Spanish red wine from Termes Tinta De Toro vintage 2015.
Fulvescens Rice is out of this world, seaweed rice, raw halibut and sea urchin, garnished with sea lettuce and served with soya bean soup (doenjang) by the side. Mix all the elements together and enjoy each and every spectacular mouthful of a well balanced course. The side dish of Korean abalones marinated in soya sauce is robust and full of flavours of the sea, lying on original white kimchi with tangerine from Jeju. The soup has a clean and herbal taste, a good accompaniment to the rice and shellfish.
Three choice of gourmet teas, Korean tea, pu er and roobois or coffee are available to go with your dessert which is the phenomenal Egg, an egg shaped dessert, mango (egg yoke), white vanilla cream (egg white) in a white sugar base shell placed on jujube (date) granita.
