A good way to start your meal is with the trio of Jade Dragon Barbecue Pork Collar, Lychee Wood Roasted “Peking” Goose With Blini, Chilled Cherry Tomato Marinated With Avocado Oil And Plum Wine Jelly. The red tomato from Holland is peeled and placed on Japanese umeshu jelly with plum powder, a sweet sour delight to get your mouth watering for more. Spanish iberico black pig is use for the pork collar that oozes rich flavours from the marbling finished with New Zealand honey, last but not least goose skin is flamed over lychee wood Peking style till savoury then stuffed into a mantou (Chinese bun) with shredded cucumber and leek.

Fish Maw And Blue Caviar Rabbitfish Soup is divine. It features Iranian caviar, delicate fish maw in rich Rabbitfish soup. Jade Dragon is probably the only restaurant in the whole of Macau to use this unique fish to make a soup which is well balanced.  The soft South American fish maw is stuffed with Japanese silky onsen (hot spring) tofu and Alaskan crab meat. A very rare 25 years old mandarin orange peel is added to the soup giving a touch of citrus notes and slight orange hue to the normally white soup. Each spoonful is an absolute delight. A glass of Soalheiro, Alvarinho vintage 2017 wine (a winery by the river that separates Spain and Portugal near the Mediterranean sea) is a great match to this dish, with hints of peach and apricots, fruity but not in your face with low tannin. A well balance wine that is easy to drink.

For Steamed Garoupa Fillet On Egg White Custard With Chinese Aged “Hua Diao” Wine Sauce, succulent and sustainably farmed fish is perfectly steamed and gently place on top of a chawamushi made from American organic free range egg whites with Japanese butter also steamed till a super soft and silky texture is achieved. Topped with a layer of 20 years old vintage Hua Teow Jiu (Chinese wine) that packs an alcoholic kick and also adds another dimension of flavour and fragrance. This dish is well paired with aromatic loose leaf Jasmine tea.

Chinese Almond Creme Brulee With Honey

A Chinese twist to the traditionally western dessert, Chinese Almond Creme Brulee With Honey is a medley of Japanese egg, almond cream, birds nest and Moroccan red dates served inside an opened earthenware tea pot filled with dry ice that keeps the pot cool and at the same time gives off a sensory “smoky-licious” experience. Portions are just right, not too much and not too little. In addition to the wine sommelier, Jade Dragon also has a tea sommelier who can offer tea paring services with a range of teas from Oolong to white, green and even floral options.
