Helmed by Executive Chef Nic Vanderbeeken, CasCades restaurant produces bold and unique dishes, perfect for any occasion, whether it is a romantic dinner or family gathering, the restaurant provides an ideal setting for anyone and everyone. Considered to be one of the very best and recognizable European restaurants in Bali, the menu simply does not disappoint. With a Head chef that bring his expertise from working at various Michelin-starred restaurant such as ‘t Convent, Restaurant Berto and Grand Caberet coupled with the finest produce sourced from all around the globe, diners are certainly in for a mouth-watering treat filled with beautifully plated dishes and remarkable flavours.
Diners are afforded the choice of ordering from the Ala-carte or degustation menu, we highly recommend the latter for both lunch and dinner, with a combination of beautifully crafted dishes that works wonders on the palate. Starting off with a Peranakan favourite, the Acar Acar which consists of orange pickled vegetables, cucumber, carrot, sweet sour tofu, sambal mayo, peanuts and chilli gel is plated with such precision, almost too beautiful to eat, but do not let the aesthetics fool you, it tastes as good as it looks. Another Asian-influenced dish is presented, the Laksa, bringing together authentic flavours such as Indonesian curry with grilled marinated king prawn, duxelles of button mushrooms and beetroot infused quail egg which adds an overall sweetness to the dish.
Showcasing the diversity of the chef, the menu then transitions towards modern European dishes such as Octopus served with squid ink coral tuille, spiced sweet potato and kemangi sauce. Once again magnificently plated, the different elements in the dish complement each other perfectly to give outstanding flavours and textures. The Barramundi topped with spinach, young coconut sauce, cured egg yolk and Chinese kalian is a very well-balanced dish worthy of savouring, the fish is soft and flaky on the inside with an incredibly crispy skin on the outside. Another dish well worth noting of is the Rendang Sapi, the beef cheek is braised for 10 hours and simply falls apart with just a slice of the fork. It is served together with Sumatran Rendang sauce, corn perkedel and chilli sambal that is a must-have for spicy food lovers.
For dessert, Mango Madness which combines freshly grilled mango with pickled lime, coconut gel, palm sugar cake, passion fruit caviar and tamarin sorbet is the perfect way to end an already impressive meal.
