Winning our top accolade for being the best of all the dining establishments that have opened in Singapore for the year 2022 is LUMO, housed in a modern-era shophouse exterior embellishing a cushy inside. Following in the footsteps of a speakeasy, the restaurant bar can be divided into two distinct areas: a 40-seater bar front that is aglow with a warm corona and brimming with convivial fun and a 17-seater open kitchen if you’re looking for a dinner-and-a-show.
Plating here is an important part of your whole dining experience, being a delight to not only your palate but to your eyes as well. Aside from the casual vibe, LUMO revels in its periodic changing of the menu. This allows the bar and restaurant to ensure the dishes are made of the freshest seasonal ingredients. Perfect for celebrating milestones of any season, the latest sharing plates focus on pairing LUMO’s signature cocktails with hearty Modern European fare.
“This is a gem elevating the gastronomic scene in Singapore,” said Editor Connie Loo. “We always pride ourselves in creating dishes with a LUMO twist to it,” Andrew Chok, LUMO’s owner and founder said, citing the Norwegian Fjord Trout dish as an example. Salmorejo, a summertime Spanish tomato-based cold soup, is now presented as a ‘sauce’. To balance the flavours, roasted tomatoes are used and served hot to align with the taste profiles of the locals.
The team at Savour BlackBookAsia Magazine recommends the notable Canadian Prime Rose Pork Rack. This flavourful pork roast dish comes with padron peppers and an in-house whiskey raisin reduction, which adds a slight sweetness and tang to the moreish serving. A must order well balanced delectable course. Dishes are kept to a maximum of four to five components; with the economy of ingredients used, it gives more attention to contents.
Head Chef Dex Tew adds that this presents an opportunity to educate customers about what they consume. “All meats and seafood that we eat were once living beings,” says Chef Tew, “we want to share the brand ethos to always respect the ingredients and be more mindful of the origins. We often make full use of the ingredients, for instance, a piece of pork’s meat will be used as the protein of the dish, while the bone trimmings can be used to infuse flavour into the accompanying sauce.”
More than just another bar, the spotlight is on LUMO’s drinks selection, where cocktails are made with sustainability in mind. “We use almost the entirety of our ingredients to ensure minimal waste,” says Head Bartender Aaron Lancelot, “for instance using the whole of a lemon (from the zest to the juice and even the pulps)—this is a sign of respect and appreciation of our daily common ingredients that we hope to impart to our customers as well.”
For the cocktail menu, it takes its inspiration from heightening customers’ emotions by imbuing the cocktails with the hues to the emotions normally associated with them. Like the colour red, which signifies passion, life and love; it is also representative of fury and intensity that imbues the drink with a spicy flavour profile. A selection of non-alcoholic drinks is also available as well as a range of wine by the glass and bottle to suit all kinds of diners.
It brings Savour BlackBookAsia Magazine much joy to announce that the most votes for our Best New Dining Establishment 2022 goes to LUMO Bar & Restaurant, Singapore and deservingly so!
