The star of the night has to be the Smoked Wagyu from Yamaguchi in Japan’s Chugoku region with beef jus and rocket lettuce paste. Accompanied with potato and onions, garnished with fresh lettuce and edible flowers. Divine when eaten with Sito Moresco, Langhe vintage 2016 from Italy, ruby in colour with a very elegant and balanced body brimming of dark berries like cherries.
For desserts, the Meringue is a served on a salted crust base with yuzu cream (made from a Japanese citrus), flambéed with Cointreau a flavoured triple sec liqueur produced in Saint-Barthélemy-d’Anjou, France that adds a touch of orange bitter notes to offset the sweetness, finished with edible gold leaf. This dish is simple looking yet an amazingly good conclusion to your gastronomic experience at Azure 45.
