Experiencing an exquisite meal steered by a Michelin-starred chef at one of the most instagrammble hotel in the heart of Macau, The Morpheus at City of Dreams or better known as COD. All made possible by French-born Monégasque chef Alain Ducasse who, with several award winning restaurants under his belt, brings world class dining to the dazzling Cotai Strip. Alain Ducasse at Morpheus holds the accolade of 2 Michelin stars and in Savour BlackBookAsia’s opinion, certainly deserves a third.
Take the lift up to to the restaurant on the third-floor of this amazing futuristic property, which is also the world’s first hotel supported by a free-form steel exoskeleton with a mesmerizing array of internal and external grids. Upon entering, notice the gorgeous light fixtures hedging you towards the main dining area. The dining room is tastefully designed with luxurious carpeting, contemporary furniture and an extravagant showcase of antique cutlery, tableware and kitchenware from renown brands such as Lalique and Baccarat some close to 100 years old.
Start off your exciting dining experience with a glass or two of Selection Alain Ducasse Champagne amidst the eschewing elaborate ornaments and finishing in a space that is sumptuous and stylish. Dinner offers many lovely à la carte options ranging from fish and crustaceans to poultry and meat. Highly recommended is the Epicurean Menu with your choice of 4 half dishes, cheese and 2 desserts that will certainly impress your date or business associate.
Must try dishes include Mediterranean Gamberoni, Delicate Gelee, Gold Caviar, an elegant course of fresh prawn with flavourful shellfish and saffron jelly topped with generous amounts of premium caviar that goes perfect with champagne. Natural saltiness from the caviar and sweetness from the prawns tickle your taste buds as you indulge. The prawns are lightly and very quickly par-cooked in a rolling boil of stock made from garlic and white wine yielding a delectable texture.
With a vision to provide distinctive experiences to one and all, delivered with innovation that combines both tradition and change, Alain Ducasse at Morpheus must certainly be added to your upcoming reservations list. If you are not already in love with the cuisine at this stage, try the Lightly Smoked Blue Lobster, Green Asparagus And Black Olives that is bound to win you over. Succulent blue lobster from Brittany in France’s northwesternmost region (famous for it’s seafood), is very delicately smoked, then beautifully plated with green asparagus accompanied with aubergine sauce and olives.
Meals come with informative wine recommendations from the sommelier who has a pairing for every single dish on the menu, that not only compliments the food but at times also enhances it. Dive into Farm Veal Chop, White Asparagus And Citron, a small tender part of the milk-fed veal near the top of the chop is pan fried whereas the bigger portion is grilled and served with seasonal white asparagus and rich veal jus. Citrus notes prevail but does not overpower. A strong end to your mains that pulls guests into submission for the desserts to come.
Fortifying a classic French end to your gastronomy, Rum Baba Like In Monte-Carlo is an obvious choice. The Rum Baba Alain Ducasse style is presented on a silver tray, sliced and portioned table side with a helping of mascarpone cream and pouring of top quality rum. For apple lovers, the innovative Golden Apple is a must have, cooked in calvados (apple brandy) and vanilla, accompanied with apple sabayon and your choice of granita (granny smith or golden apple), complete with fresh lemon shavings served with preserved kamquat. A good balance of flavours for a fond ending to the meal.

Heavily focused on fresh produce and seasonal ingredients with sustainability as of paramount importance which includes resource recycling and waste minimization. All staff are extremely well trained, taking pride in their craft be it behind the scenes in the kitchen or service making regulars even out of first timers.
