Aether House, by Aether Wines & Spirits, is the newest French-influenced food and beverage establishment on the ground floor of So Sofitel (where BlackBookAsia Group had housed many of our corporate VIPs). Bringing a taste of the country’s world class fare to Singapore, Aether House is modelled after bistros in France serving up délicieux cuisine, complemented by an extensive range of wine, and a selection of coffee and tea for teetotallers. Bring home a piece of France from the retail section full of French inspired merchandise for francophiles.

Aether House

Aether House is an inviting and photogenic space with antique books specially flown in from France placed neatly around the restaurant. Bathed in natural light with beautiful arches and pastel interior cleverly contrasted with the deep emerald tiles of the wine bar that steal the show. An ingenious light fixture right above the wine bar features a virtual sun from INNERSCENE that creates an illusion of a window in the ceiling and an artificial sun that works to provide more depth to the premises and introduce even more natural light into the area.

Huitre, Boeuf, Caviar

Aether House “had us at hello” with the amazing Amuse Bouche; Huitre, Boeuf, Caviar. A decadent dish of Japanese Omi wagyu Beef and fine de claire spéciale oyster tartare hidden below generous amounts of “Kaviari” caviar paired perfectly with a flute of Varnier-Fanniere Brut Zero, a grand cru with literally no sugar. Omi in Savour BlackBookAsia Magazine’s opinion is one of Japan’s top three beef along side Matsusaka and Kobe while Fine de Claire oysters are eaten all over the world. Do note that this course is subject to change due to seasonality. The bubbles compliment all the elements with a refreshing citrus nose and well rounded ripe body on the palate.

Varnier-Fanniere Brut Zero
L’Octopus De Mediterranee

The gorgeous medium dry, yellow gold coloured wine from Alsace; Dopff Au Moulin (Riesling Europe 2014) is ideal with L’Octopus De Mediterranee. As the name suggest the octopus is caught in the Mediterranean sea, prepared carpaccio style served with aioli, drops of lemon oil and grapefruit wedges for acidity. Beautifully plated with edible flowers, a dish that taste as great as it looks. “Absolutely love wine from Alsace and this dish brings back fond memories from my trips to various destinations near the Mediterranean sea such as the spectacular Saint-Jean-Cap-Ferrat, south of France.” Editor In Chief, Gabriel Tan

Dopff Au Moulin (Riesling Europe 2014)

Savour the Le Poulet, chicken ballotine (a de-boned thigh and/or leg part of the chicken, stuffed with a uniform mixture of lean meat with fat plus other ingredients) served with sides of potato gratin espuma, truffle sauce and French winter truffle for those who prefer something more filling. The prized fungi is shaved table side, adding to your unique dining experience. Elevate your meal with a glass of elegant Chateau La Valliere (Lalande De Pomerol 2015). When you see Lalande and Pomerol on a bottle, buy it! Rich and full bodied with an excellent long finish.

If we had an award for best soufflé, Aether House’s Le Soufflé De Singapour will win it, hands down. Chef’s Laurent Brouard’s own creation of the baked egg-based dish, originated from France, with a local twist by using kaya (coconut jam) and pandan served with gula melaka ice cream. Balance the sweetness and end your meal on a good note with a selection of craft coffee concocted by Head Barista Lex Choo. So put aside all pretentiousness and be inspired by Parisian sensibilities at Aether House that will set diners off on their journey of discovery, exploration and appreciation of all things French.
