For the finest local Indonesian cuisine with a twist, Arsana Bali has an abundance of that in their vast menu with offerings such as the unbelievably tender Wagyu Rendang all the way to the traditional Tumpeng, each dish is a discovery that will simply make your mouth water. Located at Alila Seminyak along the street side of Taman Ganesha, the restaurant has renown Chef Patron William Wongso at the helm, one of Indonesia’s most respected culinary experts and an ambassador of Indonesian cuisine to the world, be reassured that for each and every dish there is absolutely no compromise when it comes to the quality and authenticity.
For appetizers, the Bakwan Jagung Udang is a great way to start the meal, light and crispy, the fried sweet corn and shrimp fritters is a typical Indonesian street food that will leave you wanting more with every bite. Another favourite is the Beef Bitterballen, very much like a Dutch croquette is crispy on the outside and has a creamy stuffing of beef on the inside, served with dip on the side to complement the overall dish. For those looking to have something soup-based, the Pindang Serani Salmon is very soothing. The Salmon is simmered in a fresh herbs broth with sour bilimbi to gives a slight tanginess, chili is also added for some heat. Whereas for some greens, the Gado Gado Jakarta is ideal with a mixture of fresh vegetables in Peanut dressing, great on its own or as a side.
For the mains, the Wagyu Rendang is a must, the West Sumatran caramelized Wagyu beef curry is served with tempeh and fried cassava leaves. The combination is absolutely perfect with the sweet and spicy sauce pairing seamlessly with the saltiness of the tender Wagyu beef. Another signature at Arsana Bali is the Tumpeng which is Traditional Indonesian coned rice, a popular item is the Tumpeng Arsana with its unique tricolor coned rice consisting of white, brown and yellow rice served alongside Wagyu sate, fish curry, spicy shrimp, vegetable stir-fry, fried chicken and caramelized potatoes.
An interesting item on the menu and definitely one for the adventurous-eater is the Aneka Sambal, a collection of various types of sambal chilies from all around Indonesia, it lets diners have a complete taste of all the different profiles and spiciness on offer such as sambal ijo, sambal dabu dabu, sambal terasi and sambal matah, each unique in its own way.
