Kubu Restaurant

An experience like no other, Kubu, which means hut in Indonesian, provides just that. Staying true to tradition, the restaurant is designed with heavy use of bamboo in its architecture and offers an intimate space with nine private cocoons resembling shelters where Balinese farmers keep the rice after harvesting habitually. The private cocoons overlook the Ayung River, truly setting the mood for a romantic dinner with the amazing view, tropical breeze and soothing sound of currents passing by.

The degustation menu is highly recommended, Executive Chef Maurizio beautifully pairs together dishes that works wonders on the palate. Guests are presented with starters consisting of an amazing array of bread to choose followed by the chef’s collection which changes from time to time dependent on the produce obtained on the day. For the mains, the Tuna “Crudo” with Burrata Pugliase, Smoked Lettuce and Tomato Essence where the remarkably fresh tuna is paired amazingly with the texture of burrata cheese. The second dish, Mascarpone and Eggplant Ravioli with Cod Fish, Onion Cream and Smoked Ricotta is mixed with the unique Tomato Cosumme, where egg whites and chicken broth are used and strained with tomato sauce to absorb the colour turning it into a clear based soup. The exceptionally tender Wagyu Beef Rib Eye served with Braised Tongue, Celeriac and Truffle Jus, perfectly rounds off the mains.

For dessert, the delectable Chocolate Fondant with Baileys Ice Cream with Sambuca Gel is served along with the chef’s selection of carefully selected sweets and cookies perched on a handcrafted piece of wood, a definite talking point at any table. A glass of coffee liqueur is served at the end of the meal, a great way to thoroughly balance off the meal.
