The beautifully crafted indoor space is an all-day dining restaurant serving fusion cuisine focusing on Hispanic with strong influences from Middle Eastern and Asian delicacies. With the kitchen helmed by Executive Chef, Hamish Lindsay, who has worked together with some of Australia’s finest celebrity chefs such as “world champion pizza maker” John Lanzafame. A light dish to start the meal is the Tuna Feuliette, finely sliced fresh tuna is placed on a bed of fried crispy tortilla with truffle aioli, caramelized onions and micro herbs. Another starter, with a slight Japanese influence, is the Crispy Soft Shell Crab Salad, the crab is fried perfectly and served with coconut ginger foam, pomelo, green mango, beansprouts, Thai herbs, spicy chili dressing and dragon fruit caviar. Giving a nice mixture of freshness, saltiness and crunch with each bite.
For the mains, the Macaroni Nero is a delightful dish with its homemade squid ink macaroni, further enhanced with generous amounts of Papuan river prawns, asparagus, extra vigin olive oil and crumbed lemon mollica. For meat lovers, a must-have is the Beef Short Rib, the slow-cooked tender beef simply falls of the bone with just a slice of the fork, it is served with green pea mash, Yorkshire pudding, emmental cheese and mint gremolata. Another recommendation is the Spicy Grilled Chicken prepared with Siracha chili caramel, fried eggplant salad, Thai basil and crispy shallots.
To end of the meal splendidly, desserts such as the Peanut Butter Brulee and Valrhona Caramello Tart will leave diners absolutely satisfied.
