November Pick: BAM! Tapas and Sake Bar

Tucked neatly away at Tras Street, located beyond the glitzy shopping belt in a historic locale is casual Spanish-Japanese eatery, BAM! Singapore’s first gastro establishment to pay tribute to a revolutionary trend of “Modern Shudo” – a contemporary way of sake appreciation.

Having recently expanded into two distinct spaces, No.38 features a glass cellar and relaxed open kitchen with high chairs at the counter in an industrial-dressed atmosphere of concrete walls and nude bulbs while the other wing is made up of a mix of materials; namely: wooden beams, textured cement, metal, and rustic mirrors in a more restaurant setting. BAM! Is truly a dining space with purpose, showcasing and promoting the virtuosity of pairing the stellar sake collection with Spanish-inspired cuisine.

At BAM! The menus are ever-changing dependent on the ingredients, as the kitchen insists on using only the finest and freshest seasonal produce from importers and local markets. To be paired along with the innovative tapas dishes, BAM! boasts an exquisitely curated list of over 80 sakes labels from more than 15 breweries from around the world leaving the customers truly spoilt for choice.

Cold capellini with uni and sakura ebi

With Chef Pepe Moncayo, former chef de cuisine of Shanti, at the helm, the preparation and execution of the dishes are simply magnificent. For starters, a dish as simple as the Canadian Oyster with Ponzu, Cabbage and Belachan makes an impression, the freshness of the oyster coupled with the saltiness of the Ponzu and spiciness of the Belachan works wonders for the palate. The Cold Capellina served with Uni, Sakura Ebi, preserved lemon and hazelnut is another to relish, fusing perfectly the elements of east and west. When available, a must -have is the Carabienero and Ama Ebi rice with pickled ginger and black garlic, the strikingly red prawn is sweet and provides a burst of flavor at the very first bite, leaving you wanting more. For the adventurous, the Tuna Noten, which is taken from the top of the fishs’ head, is served with green apple, sea grapes and “rostit” jus, although the meat is slightly tough it is definitely flavourful and worth a try.

For desserts, the perfectly fried Churros with Vanilla and Chocolate or steamed lemon cake with coconut sago, cracker and passion fruit is a great way to end the meal.
