In the traditional selection, must-have items are the Bakuan Kepiting, where the soft shell crab fritter is infused with salted egg and curry leaves. Another is the Udang Kipas Woku with Gorontola slipper lobster, coconut, potato and calamansi. The lobster is extremely fresh and the sauce is a concoction of green curry and kiffer lime which balances the entire dish very well. The Buntut Makasar is exceptionally flavourful too, with the soft and tender chargrilled oxtail that breaks apart with just the use of a fork, is served with soy, peanuts, leeks and local herb kluwek broth. For the modern section with full of imaginative culinary creations, the Sumbawa Charred Octopus, locally sourced from Bali is served with white beans, papaya flowers and red peppers for a hint of spiciness. The Mollucan Barramundi in Corn Husk is another innovative dish, with yabbies, belimbing, turmeric and tapioca dumplings on the side.
