For one of the best dining experiences in Bali, Merah Putih is a definite visit. The Indonesian fine dining restaurant offers classic local cuisine using only the highest quality ingredients to create both traditional and modern dishes, showcasing the creative best that Indonesia has to offer. The interior dining space is absolutely stunning, with high ceilings and full length glass walls allowing natural light to shine in and fill every corner of the restaurant. The dimly-lit hollow pillars within the dining area are an architectural work of art, especially when it rains, the water flows through almost like a waterfall, indeed a sight to behold.
The elegant restaurant splits their menu into two sections, the traditional for purists and modern for those who are a little more adventurous. Staying true to Indonesian cuisine where every meal is a communal affair, they offer small and large plates perfect for sharing. A tasting menu is available as well and is highly dependent on the produce the chef receives on a daily basis.
In the traditional selection, must-have items are the Bakuan Kepiting, where the soft shell crab fritter is infused with salted egg and curry leaves. Another is the Udang Kipas Woku with Gorontola slipper lobster, coconut, potato and calamansi. The lobster is extremely fresh and the sauce is a concoction of green curry and kiffer lime which balances the entire dish very well. The Buntut Makasar is exceptionally flavourful too, with the soft and tender chargrilled oxtail that breaks apart with just the use of a fork, is served with soy, peanuts, leeks and local herb kluwek broth. For the modern section with full of imaginative culinary creations, the Sumbawa Charred Octopus, locally sourced from Bali is served with white beans, papaya flowers and red peppers for a hint of spiciness. The Mollucan Barramundi in Corn Husk is another innovative dish, with yabbies, belimbing, turmeric and tapioca dumplings on the side.
A great variety of cocktails such as the refreshing coconut water mojito, sorbet margarita and lychee hibiscus martini pairs well with dishes. Desserts like the chocolate ambon cake with mousse and banana ice cream is a great way to end the meal.
Drinks: Large selection of refreshing signature cocktails, wines and spirits.
