One must start with Le Caviar Impérial, Imperial caviar with crustacean jelly and cauliflower smoothness, chilled sweet corn veloute with caviar and golden croutons, combination of imperial caviar and salmon tartare with shiso sprouts, and saffron crisp are just sublime, the epitome of how good caviar should be served.
If you like something simpler with caviar try L’Œuf de Poule, crispy soft boiled egg with imperial caviar, the contrast between the crispness and the softness of the egg works well with the flavour of caviar.
Outstanding recommendation for the mains would be Le Homard, lobster baked in cocotte with chestnut and baby turnip is presented in a gorgeous dish and deshelled and plated before your very eyes and Le Turbot, roasted turbot “on the bone” with mushrooms, abalone and yuzu, a grand and contemporary dish with subtle hints of earthiness from the mushrooms and slight sweetness from the yuzu.
Perfect ending to your meal will be a favourite with the regulars, Le Chocolat, warm and smooth “IIanka” chocolate souffle with vanilla ice cream or La Griottine, cherries infused with mix spices, pistachio creme brulee and chocolate “Manjan”.
A special Prémices de l’Hiver Menu can be ordered either as a full set menu or choices of one, two or three services that allows diners to do a bespoke meal according to their appetite and mood.
