Modern Chinese fine dining cuisine lead by celebrity and multiple award winning chef Sam Leong admits a stylish, spacious interior of contemporary western furnishings and giant tree like branches artistically spread out throughout the venue giving diners a sense of having their meals under a vast canopy of flora and fauna in the island of Sentosa.
Stand out picks from the menu are Steamed Salmon with ginger flower, lemon and kaffir lime leaves showing that even healthy dishes can be delicious and pleasing to the eye; Wagyu beef with foie gras in XO sauce blending eastern and western flavours in an innovatively manner that works well with diners of any nationality; Char Grilled Cod, crisp to the touch and soft on the inside, simply plated focusing entirely on the quality of the fish and the manner of cooking.
Another favourite among the regulars would be the Slow cooked Wagyu Beef Cheek that is moist and tender while adding another dimension to this dish is the use of black truffle sauce and cumin.
Standing in its own right is Steamed Egg Chawamushi, super soft in texture and further enriched with pan seared foie gras. For dessert, hands down winner will be Cream of Avocado, not overly sweet yet rich and thick in consistency.
Forest also has a Chef’s table option where Chef Sam Leong himself will entice and excite you by cooking right before your very eyes, reservations are encouraged. A value for money Sunday Lunch is available comprising of thirteen tasting portions served over an eight course lunch.
