DB Bistro Moderne

Chef Daniel Boulud sets the bar high with an advant-garde mix of French cooking and American flavours that birth DB Bistro Moderne.

Set within the stunning Marina Bay Sands Shoppes visited by locals and tourist in the thousands every week. A true test for every French restaurant would be its French onion soup as well as its escargots and DB Bistro Moderne certainly does not disappoint.

The French Onion Soup made with classic onion and beef consumme, gruyere topped with croutons is bold and intense. Escargots Persillade, using an interesting herbed garlic almond butter with roasted tomatoes that brings out a delicious earthiness to this classic dish.

Another starter that scored full marks is Wild Mushroom Soup, mixed with sweet onion, celery and aged parmesan providing this soup an appetising texture.

For main course there is plenty on the menu to please all kinds of diners; New England Casserole is filled with fresh and juicy mussels, clams, shrimp, spicy fennel sausage, yellow corn, parsley and served with grilled garlic bread and probably the most talked about burger around The Original db Burger, imagine perfectly cooked sirloin burger causing the meat to retain lots of juices, filled with tender braised short ribs and sizeable foie gras served on a parmesan bun, just one bite will send you to burger heaven with an amazing mix of flavours.

A good finish would be Lychee and Blueberry Vacherin dessert, sorbet with meringue and creme chantilly that looks like a piece of art, too stunning to be eaten.

Drink: One of the best wine list around by the glass and bottle as well as a range of classic and contemporary cocktails.
